Couple months late, but I've got a showpiece here that I did for a pastry class exam. It was a pain in the ass, honestly, and I don't think I'll ever spend as much time as I did ever again for the sake of half a dozen cupcakes.

Anyway, I played around with some citrus fruits for this, since they're nice and bright colours and often not something you see in pastries unless they're in a high end bakery. I have some grapefruits, blood oranges, and mandarin oranges in these extremely busy cupcakes, along with some almond buttercream to neutralize the amount of acidity going on from the fruit. I did NOT use paper liners for these, those cute little cups you see these in are molded white chocolate, as if there already wasn't enough stuff to look at. This exam demanded technical skill, and boy they heckin' got it. I had some help from some lower semester students, since cleaning was definitely NOT something I had time to do.
Overall they came out really nice, very pretty, but my god they took work. Never again.
